Yes, friends, you’ve tuned into another epiosde of, “As the Palapa Turns”. Stay tuned to find out WHERE the family will live! Will they hit the road when their rent ends May 9th? With they kill each other in a WW3 of elbowitis? Will 300sqft over 3 years lead to absolute anarchy?
It is almost worth settling down simply for counter space. Picture if you will, making dinner. The salad fixings are all in the sink in their bags. The bowl sits on a side out tray under the TV. A cup and the water pitcher share the entire extent of counter space. The carrots are shredded into the salad bowl sitting in the sink. Any extra makings are placed on the stovetop away from flame. In our kitchen, the stovetop serves as counterspace also. To make sandwiches, everything must be cleared from the dining table as it is now counter space. Sometimes food goes on the couch.
Picture if you will, now, your kitchen. Nuff said.
Sellers of said palapa should be in the process of obtaining a notary instead of asserting that Canadian notaries do not witness signatures. Harumph. But it seems we are extraordinarily close to purchasing the palapa we’ve been wanting. It will need a lot of work, but the location is pretty sweet.

This is one reason we brought our “camp kitchen” for outside under the awning. Half the time, I just can’t stand cooking indoors (and we have about a linear foot more counterspace than you.) Our camp kitchen is about nine feet long, with three surfaces (two wire, one solid) and a back on which to hang lamps and utensils. We actually bought from LL Bean it when we were car/tent campers. We have a two burner Coleman stove and a small propane grill for the wire surfaces, and the “countertop” holds all the goodies. Not exactly the same as my lovely milk-paint maple and slate counter/sink kitchen I built in Portland, but it works.
I’m sure the heat and humidity makes it harder for you all. We’re looking to escape to cooler climes today, as a heat wave is building here in Nevada.

Bill and I are buying this whole, “chopping block with wire baskets underneath that has an extention and will allow me to prepare a meal without dropping something off the 1/2 inch of counterspace” thingie. It also lowers into a coffee table-like thing so the grown ups can eat on a hard surface instead of their laps. It is in one of the RV books, but Target has one just like it for 1/2 the price.
I can’t stand the thought that I bought this house in Merida because I wanted more counter space… but my daydreams all seem to be about large kitchen spaces.
